Honey Cinnamon Muffins

Ingredients
Filling:
- 6 tbsp. softened butter
- 1 cup light brown sugar
- 6 tsp. cinnamon
- 10 tsp. water
Muffin:
- 1/2 cup of butter, melted
- 3/4 cup low-fat milk
- 2 eggs
- 1 cup all purpose flour
-3/4 cup whole wheat flour
- 1/2 cup oats
- 2 tbsp. cornstarch
- 1/2 cup granulated sugar
-1 tbsp. baking powder
-1 tsp. salt
- 1/4 tsp. cinnamon
-1/4 cup honey
Glaze:
-1/4 cup honey
-1/2 cup confectioners sugar
-1/4 tsp. cinnamon
- 2 tbsp. water

Recipe:
(Makes 12 muffins)
Preheat the oven to 375 degrees Fahrenheit
Line the muffin tin with baking cups, or spray with cooking spray
Mix all of the filling ingredients together in a small bowl until smooth, set aside.
In a large bowl mix together the butter, milk, and eggs.
In another large bowl, mix together the flours, oats, cornstarch, sugar, baking powder, salt and cinnamon.
Slowly combine the dry ingredients with the wet, and mix until well combined. Mix the honey into the mixture once it is smooth.
Next, fill each muffin tin a little under half way with the mixture. Then, drop a spoonful of the filling on top of the batter. Top it with another spoonful of batter, or until the muffin tin is almost full.
Bake in the oven for 15-20 minutes, or until they are golden brown on top and a tooth pick can be extracted clean.
While the muffins are in the oven, mix together all of the glaze ingredients until smooth.
Once the muffins are taken out of the oven, let them cool for about ten minutes, and then top with the glaze and enjoy!


Honey and cinnamon are two of my favorite flavors, and I love baking muffins, so why not combine them all into one? This muffin is a great back to school snack, as it's healthy and delicious at the same time! The honey in the recipe creates a sweet flavor that everyone can enjoy. Kids are sure to love this muffin as their after-school snack!
