Honey Blueberry Cobbler Jam

Yield: 40 Servings

Ingredients

2 1/2 pints or 5 cups Fresh or frozen blueberries
1 cup apple juice
1 cup local raw honey
1 box of low or no sugar powdered pectin
1/4 tsp cinnamon
1/2 tsp nutmeg
1 tsp pure vanilla extract

Directions

Place blueberries in a large pot and mash. Add apple juice and powdered pectin cook over medium heat stir continuously till it comes to a boil then add honey, cinnamon, nutmeg, and vanilla boil for 1 minute. Take off heat put into hot sterile 1/2 pint jars seal and process in a water bath for 15 minutes. Yield: serves 6

Notes:
This makes 5-6 half pint jars. Goes great over fresh goat cheese with toasted candied pecans.
